So if I were going to try and steal someone elses arms, these would be the ones. This shield is so clean and simple. And who knew the guys who wrote A Knight’s Tale were having a little joke? If the folks as Ospery Press are to be trusted, Ulrich was indeed a real person.

He may be real but those weren’t his arms in the movie… I think they were vert three eagles displayed sable but I’m not certain…

Oh yeah, you are correct, but per Ospery’s book on Heraldry, these are the man’s real arms. I like them quite a bit. I’m guessing there may have been monetary reasons for fabricating arms for the fictional movie character.
Wikipedia has this representation of Ulrich from the Codex Manesse. It seems to be Or instead of Argent.

Yeah, I think that depiction pretty cleary shows or, whereas the image in the Ospery book is kind of on the fence. Regardless, or, argent, they both look great and make for a simple and striking design. I love the way the chevron has been carried over into standard military markings too.
