The charges look much better on the saltire. I’m beginning to agree with Patrick, though, that the crook should be left in the crest.

I like the latest one with peel and crook on a saltire, but what if you replaced the crook with another peel? I think the design would be more balanced that way. I also agree with Patrick that symbols of profession should be left in the crest or badge and not on the shield itself. Perhaps a bear holding a shepherd’s crook for a crest? Let the shield say "Baker" and the crest say "Jonathan".

I actually like all three of the previous arms. (Both your two pics and Patricks).
The saltire looks good, and so does the bakers peels.

I like the basic design. The field may have to many estoiles powdered across it though. I believe that if the Vert was made a bit darker the arrangement would be more acceptable. The field of the arms of Henri Christophe d’Haïti was semey of estoiles and it looked very good.
I agree with the "too many stars" assessment. Maybe cut it to about three, give or take, in each angle made by the peels.

Is it possible to denote the number of estoiles to be powdered on the field? For instance, would it be possible to describe the field as "semy of thirteen estoiles?"

Yes, but (a) 13 stars is so associated with the 13 original states that I wouldn’t use it for anything else, and (b) the baker’s dozen would apply to the loaves on the paddles, but doesn’t make sense for the stars, and (c) to me, stars falling on Alabama suggests a countless (i.e., indefinite) number. My opinion only.

Too close in overall appearance to the Stars and Bars for my comfort. It makes me think of Martha Stewart with a drawl and a martini glass.

I think this is the best so far, just replace the crook with another peel. No saltire needed since they are in saltire already.
