The field of the escutcheon and the mantling both appear to be grey from the colours on my screen.
The article says the carving is fairly old and is just now being restored. I expect the gray is actually a faded blue. Beloit’s colors are blue and gold.
The college also has a coat of arms on its seal—not the same arms but related. I suspect the carved version was an attempt to make the arms more distinctive and heraldic.

Blue makes sense. Hopefully (but not very) the restorer will come to the same conclusion.
