I have a favor to ask; is there anyone who might be willing to knock together a full achievement for me? I’d just like to see what this thing might look like with a helm and mantling.

I think the blazon of your arms and crest would be much more succinct and heraldically correct if blazoned as follows:
Arms: Vert on a fess embattled between three compass roses or a like number of roundels vert (or if you prefer ‘of the first’)
As your crest should be capable of being shown ‘in the round’ would it not be better to blazon it thus:
Crest: Upon the wreath of the colours Issuant from the battlements of a tower or charged with three roundels vert a compass rose also or
Here it should that roundel is a charge and it therefore cannot be a piercing.
Rather than blazon the ‘roundels vert’ you could substitute the alternative name for such a roundel in the plural: ‘pommes’.
If using ‘the battlements of a tower’ in your crest, if might be better to blazon it as follows: ‘Issuant from the battlements of a tower or charged with four roundels vert (one and two halves manifest) a compass rose also or’

The circles/roundels are intended to be voided of the field, that is, cut out of the fess, and not charges placed on top - it’s part of the symbolism behind the design.
However, I’m not sure how to blazon that correctly.

If that is the case, ‘voided of the field’ would suit as the ‘void’ by default should be round without further qualification. So one could blazon the fess as ‘a fess embattled or thrice voided of the field’. Likewise, the wall in the crest could be similarly blazoned.
