I especially like the arms of the University of Feira de Santana, with one shell showing a pearl.

Agreed- the papal university’s arms are good, but the UFS arms are brilliant (but how are they blazoned?).

Ah, Sao Paulo….(starts to drift in memory of a great vacation…)...

Universidade Federal Rural de Pernambuco.  Though this is open to the criticism that it is really more of a logo than proper arms, in my view such a criticism is due more to the particular rendering of something that could be effectively rendered as sophisiticated heraldry.

Do these arms have a full amillary sphere behind them or half of an amillary sphere on top of the escutcheon?

Well its hard to say which, but to me it appears to be a half sphere topping the shield.
